Description
Fluffy, high-protein bread made with cottage cheese and fresh blueberries for a light, healthy breakfast or snack.
Ingredients
2 large eggs
1 cup cottage cheese
2 tbsp cornstarch
½ tsp cream of tartar
1 tbsp powdered sweetener (optional)
1 tsp vanilla extract (optional)
Zest of 1 lemon (optional)
½ cup blueberries
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet.
2. Separate egg whites from yolks; keep whites grease-free.
3. Whip egg whites with cream of tartar until stiff peaks form.
4. Mix yolks, cottage cheese, cornstarch, sweetener, vanilla, and lemon zest until smooth.
5. Gently fold yolk mixture into whipped whites.
6. Fold in blueberries gently; do not overmix.
7. Spoon onto baking sheet in round mounds.
8. Bake 25–30 minutes until golden.
9. Cool on rack before serving.
Notes
Use strained, creamy cottage cheese for best texture.
Gently fold ingredients to keep bread fluffy.
Cloud bread is best served fresh but can be refrigerated for 3-4 days or frozen for longer storage.
