- 1/4 tsp cream of tartar
- 1/2 tsp vanilla extract (optional)
- 1/2 tsp ground cinnamon (optional)
- 1–2 tsp zero-calorie sweetener or 1 tbsp honey (optional)
Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Whip Egg Whites: In a clean bowl, beat egg whites and cream of tartar until stiff peaks form.
- Prepare Cottage Cheese Base: In a separate bowl, blend cottage cheese with vanilla, cinnamon, and sweetener until smooth.
- Fold Mixture: Gently fold the cottage cheese mixture into the egg whites, being careful not to deflate them.
- Add Blueberries: Carefully fold in blueberries.
- Shape and Bake: Spoon the mixture onto the baking sheet in small rounds and bake for 25–30 minutes until lightly golden and set.
- Cool: Let the cloud bread cool on the pan for 10–15 minutes before serving.
Notes
Use fresh or well-drained frozen blueberries to avoid excess moisture. Don’t overmix when folding to keep the bread light and airy. Store in an airtight container for up to 2 days or freeze for longer shelf life.
