Description

  • 23 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • Pinch of salt
  • Optional: ¼ teaspoon cinnamon or nutmeg
  • Optional toppings: crushed graham crackers, jam, fresh fruit, or chocolate chips

Instructions

  1. Blend the Cottage Cheese: Add cottage cheese to a high-speed blender or food processor. Blend for 30–60 seconds until completely smooth and creamy.
  2. Add Flavors: Add honey, vanilla extract, lemon juice, salt, and any optional spices. Blend again until fully combined and smooth.
  3. Adjust Taste: Taste and adjust sweetness or acidity as needed. Add more honey or lemon juice to your preference.
  4. Chill (Optional): For a firmer consistency, refrigerate the dip for 15–30 minutes before serving.

Notes

For best texture, always blend the cottage cheese first before adding sweeteners or mix-ins. Store in the fridge for up to 4 days. To make a firmer no-bake cheesecake, dissolve 1 tbsp unflavored gelatin in warm water and blend it into the dip before chilling in a crust.
