Description

Ingredients

3 large eggs, separated

½ cup full-fat cottage cheese (blended until smooth)

¼ tsp cream of tartar (optional, for egg whites)

½ tsp baking powder (optional, for lift)

Pinch of salt

Optional: herbs, spices, shredded cheese for flavor


Instructions

1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

2. Blend cottage cheese in a food processor or blender until smooth.

3. Separate the eggs into two bowls—egg whites in one, yolks in another.

4. Mix yolks with the blended cottage cheese, baking powder (if using), and salt.

5. Whip egg whites with cream of tartar using a mixer until stiff peaks form.

6. Gently fold the whipped egg whites into the yolk-cottage cheese mixture in thirds using a spatula.

7. Scoop batter into 6 equal mounds on the lined baking sheet.

8. Bake for 25–30 minutes until golden and firm.

9. Cool for 5 minutes on the tray, then transfer to a wire rack. Serve warm or cool completely for storage.

Storage: Keep in an airtight container in the fridge for up to 5 days.

Freezing: Freeze in layers separated by parchment for up to 2 months.
